How to Make It

1. Step
Combine panko, Parmesan, oil and lemon zest in a shallow dish. Pour buttermilk into another shallow dish.

Preheat air fryer to 375°F for 5 minutes. Coat the basket with cooking spray. Sprinkle chicken with salt and pepper. Dredge in the buttermilk, letting excess run off. Dredge in the panko mixture, pressing to adhere. Place in the basket, in batches if necessary, and cook until golden brown and a thermometer inserted in the thickest part reaches 165°F, about 5 minutes on each side.
